Grandma’s Vegetable Soup
I have these memories as a kid….rainy days, snow days, and sometimes just any average winter day. I’d walk into grandma’s house and the smell of warm vegetable soup met me at the door. Before I left, my heart (and my belly) were full and warm. I hope this super simple recipe can offer those same feelings to you and your family
Before we get out our ingredients and turn on the stove, we’ve got to set the mood even more. A kitchen lamp does just that. Now, we’re ready to begin.
3 ingredients and a pot are all you will need to make this recipe. I thrifted this Lodge cast iron pot and it is my absolute favorite for making this soup in. One batch fills the pot up, but feel free to double it if you’re feeding a crowd!
Start by browning off your hamburger meat on medium heat.
Once the meat is cooked, add in two cans of mixed vegetables (do not drain).
Now, pour in the tomato juice and give everything a good stir. Pop the lid on the pot and let simmer as long as you like (I do around 2 hours).
It’s ready!!! Ladle it into your favorite bowl and you’re ready to enjoy the warm comfort this soup brings! I love to serve mine with cornbread on the side, but you could also add crackers too!
